Bring water to a boil. Ratio: 1 1/2 cup of water to 1 cup of rice. Add the rice and a little salt if desired. Leave to simmer for 18-20 minutes in a closed pan. Remove the pan from the heat, stir the rice with a fork and let it evaporate for a few minutes with the lid closed before serving. Cover and let stand for a few minutes before serving. Use more water for softer rice and less water for dry rice. Tenderness is a personal choice
